German Eggplant Tagine
A twist on traditional Moroccan tagine, this German-inspired dish features eggplant as the main ingredient.
Ingredients
- ●2 large eggplantabout 1 inch thick
- ●1 jar moroccancouscous spice blend
- ●1 tsp jazzedgerman-style seasoning blend
- ●1 medium onionchopped
- ●3 cloves garlicminced
- ●2 tbsp olive oilfor frying
- ●1 cup chicken brothlow sodium
- ●1/2 cup heavy creamoptional
- ●4 slices crusty breadfor serving

Preheat oven to 400°F (200°C).

Cut eggplant in half lengthwise and scoop out the insides.

Heat olive oil in a large skillet over medium-high heat.

Sauté chopped onion and minced garlic until softened.

Add Moroccan spice blend and German seasoning blend; cook for 1 minute.

Add chicken broth and bring to a boil.

Reduce heat to low and simmer for 10 minutes.

Add heavy cream (if using) and stir to combine.

Place eggplant halves in a baking dish and spoon the tagine mixture into the eggplant.

Bake for 20-25 minutes or until eggplant is tender.
