Algerian Chicken Tagine
A flavorful Moroccan-inspired chicken stew from Algeria, slow-cooked in a clay pot with aromatic spices. Serve over couscous.

- β1 1/2 pounds Chicken thighsBone-in and skin-on
- β2 tablespoons Algerian jarring spice blendAdjust to taste
- β1 teaspoon Sichuan peppercornsCrushed
- β2 tablespoons Spiced preserved lemonChopped
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β2 medium CarrotsSliced
- β2 large PotatoesCubed

Heat oil in a clay or ceramic tagine over medium heat.

Add chicken and cook until browned on all sides, about 5 minutes.

Add onion and garlic and cook until softened, about 5 minutes.

Add spices, preserved lemon, carrots, and potatoes.

Pour in enough water to cover the ingredients and bring to a simmer.
