Lentil Stew
A hearty Thai-inspired lentil stew made with a blend of aromatic spices. Serve with steamed rice for a comforting meal.
Ingredients
- β1 cup dried green lentils, rinsed and drained lentilany variety will do
- β2 tablespoons vegetable oil germanany neutral-tasting oil
- β2 medium onions, chopped stewany variety
- β3 cloves, minced garlicabout 1 tablespoon
- β1 tablespoon grated fresh ginger gingerabout 1 tablespoon
- β2 tablespoons red curry pasteadjust to taste
- β2 cups coconut milkfull-fat canned coconut milk
- β4 cups vegetable brothlow-sodium broth or stock
Instructions

Heat oil in the bottom of a large pot over medium heat.

Add onions and cook, stirring occasionally, until they begin to soften, about 5 minutes.

Add garlic and ginger and cook, stirring constantly, for 1 minute.

Add red curry paste and cook, stirring constantly, for 1-2 minutes.

Add lentils, coconut milk, and vegetable broth. Stir to combine.

Bring to a boil, then reduce heat to low and simmer, covered, until lentils are tender, about 30-40 minutes.

Season with salt and pepper to taste.
