Thai-Style Chicken Skewers
Spicy and tangy, these Thai-style chicken skewers are a refreshing twist on traditional grilled chicken. Marinated in a blend of Thai spices, they're perfect for a quick and easy dinner.
Ingredients
- β1 pound chicken breast
- β1/4 cup, crumbled jagged portuguese cheeseoptional
- β2 tablespoons tangy hot sauce
- β2 tablespoons fish sauce
- β2 tablespoons brown sugar
- β3 cloves garlicminced
- β2 tablespoons lemon juice
- β2 tablespoons coconut oil

1. Preheat grill to medium-high heat.

2. In a blender or food processor, combine hot sauce, fish sauce, brown sugar, garlic, and lemon juice. Blend until smooth.

3. Thread chicken onto skewers, leaving a small space between each piece.

4. Brush coconut oil onto both sides of the chicken.

5. Place skewers on the grill and cook for 8-10 minutes, or until chicken is cooked through.

6. During the last 2-3 minutes of cooking, brush the skewers with the blended sauce.
