Pan-Seared Mediterranean Fish Skewers
A flavorful and colorful Italian-inspired dish, featuring succulent fish skewers seared to perfection and served with a side of crunchy Mediterranean vegetables.
Ingredients
- β4-6 pieces, 1 inch in size Fish (Cod or Tilapia)You can also use other white fish like Mahi or Snapper
- β12-16 Jagged SkewersSoak in water for 30 minutes before use
- β1/4 cup, crumbled Crispy Feta CheeseOptional, for garnish
- β1 cup, mixed ( bell peppers, onions, cherry tomatoes, olives) Mediterranean VegetablesCut into bite-sized pieces
- β2 tbsp Lemon JuiceFreshly squeezed
- β2 tbsp Olive OilExtra virgin
- β2 cloves, minced GarlicMince before use
- βto taste SaltCoarse salt
- βto taste PepperFreshly ground

Preheat oven to 400Β°F (200Β°C).

Soak the skewers in water for 30 minutes. Cut the fish into 1-inch pieces and thread onto the skewers, leaving a little space between each piece.

In a small bowl, whisk together lemon juice, olive oil, garlic, salt, and pepper. Brush the mixture onto both sides of the fish.

Place the skewers on a baking sheet lined with parchment paper and bake for 8-10 minutes, or until the fish is cooked through.

While the fish is cooking, heat a non-stick pan over medium-high heat. Add the Mediterranean vegetables and cook for 3-4 minutes, or until they start to brown.

Add the crispy feta cheese to the pan and cook for an additional 1-2 minutes, or until melted and golden brown.

Remove the fish skewers from the oven and serve immediately with the Mediterranean vegetables and crispy feta cheese.
