Grilled Satay Tempeh with Spicy Malaysian Peanut Sauce
A Thai-inspired dish featuring marinated tempeh grilled to perfection and served with a spicy peanut sauce. Crispy and jagged vegetables add a satisfying crunch to each bite.
Ingredients
- β8 oz Tempeh
- β1/4 cup Vegetable oil
- β1 cup Jagged vegetables (such as bell peppers, carrots, and onions)
- β1/2 cup Malaysian peanut sauce
- β2 tbsp Thai red curry paste
- β1/4 cup Coconut milk
- β4-6 pieces Crusty satay

1. Preheat grill to medium-high heat.

2. In a large bowl, whisk together vegetable oil, Thai red curry paste, and coconut milk. Add tempeh and marinate for at least 30 minutes.

3. Remove tempeh from marinade and grill for 3-4 minutes per side, or until slightly charred.

4. Meanwhile, heat Malaysian peanut sauce in a small saucepan over low heat.

5. Grill jagged vegetables for 2-3 minutes per side, or until slightly tender.

6. Serve grilled tempeh with spicy peanut sauce and crispy satay on the side.
