Irish Bacon Hash with Crispy Smoky Onions
A hearty breakfast dish featuring crispy smoky onions, glazed bacon, and a side of crispy jade potatoes. Perfect for a weekend brunch.

- ●2 large Jade Potatoes
- ●1 large Smoky Onions
- ●1/4 cup Crispy Onions
- ●1/4 cup Glazed Onions
- ●1 cup Hash Browns
- ●to taste Salt

1. Preheat the oven to 400°F (200°C).

2. Cut the Irish bacon into small pieces and cook in a pan until crispy.

3. Meanwhile, peel and chop the jade potatoes into small cubes. Toss with a little oil and season with salt and pepper.

4. Spread the potatoes out in a single layer on a baking sheet and roast in the oven for 20-25 minutes, or until crispy.

5. In the same pan used for the bacon, add a little more oil and sauté the smoky onions until caramelized.

6. Add the crispy onions and glazed onions to the pan and stir to combine.

7. To assemble the dish, place a scoop of the roasted potatoes on a plate, followed by a few slices of the cooked Irish bacon, and top with a spoonful of the onion mixture.
