Creamy Date Pasta
A unique Mexican-inspired dish, combining the sweetness of dates with a rich and creamy sauce.
Ingredients
- β8 oz whole wheat pastapreferably bowtie or penne
- β1 cup oozy cheesesuch as mozzarella or Monterey Jack
- β1/4 cup datespitted and chopped
- β2 tbsp mediterranean olive oilfor sautΓ©ing
- βto taste iwholesome salt
- βchopped fresh cilantrooptional for garnish
Instructions

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions.

Meanwhile, heat the olive oil in a large skillet over medium heat.

Add the chopped dates and cook for 2-3 minutes, or until they are caramelized and fragrant.

Stir in the oozy cheese until melted and smooth.

Once the pasta is cooked, drain it and add it to the skillet with the date and cheese mixture.
