Malaysian Chicken Satay
Delicious and easy-to-make skewers of marinated chicken, inspired by the flavors of Malaysia. Serve with peanut sauce for an authentic experience.
Ingredients
- β500g chicken breastcut into 1-inch pieces
- β1/2 cup coconut milkfull-fat
- β2 tbsp fish sauceor to taste
- β2 tbsp brown sugaror to taste
- β2 inches grated gingeror to taste
- β3 cloves garlicminced
- β1/4 cup vegetable oilfor brushing
- β1/4 cup peanutschopped (for garnish)
- β4 lime wedgesfor serving

1. In a blender or food processor, combine coconut milk, fish sauce, brown sugar, ginger, garlic, and 1 tablespoon vegetable oil. Blend until smooth.

2. Add the chicken pieces to the marinade and mix well to coat. Cover and refrigerate for at least 2 hours or overnight.

3. Preheat a grill or grill pan to medium-high heat. Thread the marinated chicken onto skewers, leaving a small space between each piece.

4. Brush the grill or grill pan with vegetable oil to prevent sticking. Grill the chicken for 8-10 minutes per side, or until cooked through.

5. While the chicken is cooking, prepare the peanut sauce. In a blender or food processor, combine 1/4 cup peanuts, 2 tablespoons vegetable oil, 2 tablespoons coconut milk, and 1 tablespoon soy sauce. Blend until smooth.

6. Serve the chicken skewers hot with peanut sauce for dipping. Garnish with chopped peanuts and a lime wedge.
