Norwegian Rye Fritters
A traditional Norwegian recipe adapted to make crispy rye fritters with inviting flavors.
Ingredients
- β1 cup Rye flourpreferably stone-ground
- β2 medium Earthly carrotsgrated
- β3/4 cup Inviting buttermilkor regular milk
- β2 tablespoons Norwegian buttersoftened
- β1/4 teaspoon Saltor to taste
- β1/4 teaspoon Black pepperor to taste
- β1 large Eggbeaten
- β1/2 cup Fritter mix-inssuch as chopped onions, chopped fresh parsley, or crumbled feta cheese

In a large bowl, combine the rye flour, grated carrots, salt, and black pepper.

Add the buttermilk, egg, and crumbled fritter mix-ins to the bowl. Mix until a smooth batter forms.

Heat about 1/2 inch of norwegian butter in a large skillet over medium heat.

Using a 1/4 cup measuring cup, scoop the batter into the hot skillet.

Fry the fritters for about 4 minutes on each side, until they are golden brown and crispy.

Using a slotted spoon, remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.

Serve the fritters warm, with your favorite dipping sauce or aioli.
