Argentinian Sweet Rhubarb Empanadas with Italian Twist
A unique Italian-inspired dessert using sweet Argentinian empanada dough and intensely sweet rhubarb filling.
Ingredients
- β1 package (usually 8-10 empanada wrappers) Argentinian Empanada Dough
- β2 cups, cut into small pieces Rhubarb
- β1/4 cup Granulated Sugar
- β2 tablespoons Cornstarch
- β2 tablespoons Lemon Juice
- β2 tablespoons Melted Butter
- β1 teaspoon Vanilla Extract

Preheat the oven to 375Β°F (190Β°C).

Roll out the empanada dough and cut into squares.

Mix the rhubarb, sugar, cornstarch, and lemon juice in a separate bowl.

Place a tablespoon of the rhubarb mixture in the center of each dough square.

Brush the edges of the dough with melted butter and fold the dough to form a triangle.

Seal the edges with a fork and place the empanadas on a baking sheet.
