Spicy Moroccan Chicken Tagine
A traditional Moroccan dish featuring chicken cooked in a flavorful tagine with spices, perfect for a cold winter evening.
Ingredients
- β1 1/2 pounds boneless, skinless chicken thighscut into 2-inch pieces
- β2 tablespoons olive oilfor cooking
- β1 large onionchopped
- β3 cloves garlicminced
- β1 tablespoon gingergrated
- β1 teaspoon cuminground
- β1 teaspoon corianderground
- β1/2 teaspoon cayenne pepperor more to taste
- β1 teaspoon saltto taste
- β1/2 teaspoon black pepperto taste

Heat the olive oil in the bottom of a large clay or ceramic tagine or Dutch oven over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and grated ginger and cook for another minute.

Add the chicken pieces and cook until browned on all sides, about 5 minutes.

Add the cumin, coriander, cayenne pepper, salt, and black pepper, and stir to combine.

Add 1 cup of water to the tagine and bring to a simmer.

Cover the tagine and transfer it to the oven.

Bake at 300Β°F (150Β°C) for 30 minutes, or until the chicken is cooked through and the sauce has thickened.
