Smoky Ukrainian Beef Stew
A hearty and flavorful Ukrainian-inspired stew made with tender beef and a hint of smokiness.
Ingredients
- β2 lbs beef stew meatcut into 1-inch cubes
- β1 large onionchopped
- β2 medium carrotpeeled and chopped
- β2 large potatopeeled and chopped
- β2 tsp smoked paprika
- β2 tbsp all-purpose flour
- β4 cups beef broth
- β2 tbsp tomato paste
- β1 cup sour creamoptional

Heat 2 tbsp of oil in a large Dutch oven over medium-high heat.

Add the beef and cook until browned, about 5 minutes.

Remove the beef from the pot and set aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the chopped carrot and potato to the pot and cook for 5 minutes.

Add the smoked paprika, flour, and tomato paste to the pot and cook for 1 minute.

Add the beef broth to the pot and bring to a boil.

Return the beef to the pot and bring to a boil.

Reduce the heat to low and simmer, covered, for 2 hours, or until the beef is tender.

Stir in the sour cream, if using.
