Thai Pork Tacos
A unique fusion of Thai and Mexican flavors in a delicious taco dish.
Ingredients
- β500g Pork shoulder
- β2 tbsp Thai red curry paste
- β1 tbsp Fish sauce
- β1 tbsp Brown sugar
- β2 tbsp Pineapple juice
- β1 tbsp Soy sauce
- β8-10 Corn tortillas
- β1 bunch Sliced radishes
- β1 bunch Cilantro
- β2 Sliced lime

1. Preheat the grill to medium-high heat.

2. In a blender or food processor, combine the Thai red curry paste, fish sauce, brown sugar, pineapple juice, and soy sauce. Blend until smooth.

3. Rub the mixture all over the pork shoulder, making sure to coat it evenly.

4. Grill the pork shoulder for 5-7 minutes per side, or until it reaches an internal temperature of 145Β°F (63Β°C).

5. Once the pork is cooked, let it rest for 5 minutes before slicing it thinly.

6. Warm the corn tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

7. Assemble the tacos by placing a few slices of the pork onto a tortilla, followed by a sprinkle of sliced radishes, a sprinkle of cilantro, and a squeeze of lime juice.
