Jamaican Chicken Wrap
A fusion of Jamaican and Thai flavors in a crispy wrap. Marinated chicken is grilled to perfection and served in a crunchy wrap with roasted vegetables.
Ingredients
- β1 lb chicken breastboneless and skinless
- β2 tbsp jamaican jerk seasoningstore-bought or homemade
- β1 cup roasted vegetablessuch as carrots, bell peppers, and onions
- β1/4 cup thai basilchopped
- β1 tbsp intensely spicy sauce (such as sriracha)optional
- β4-6 wrap (such as flour or corn tortilla)depending on size
- β1 tbsp unsalted buttermelted
- βto taste salt and pepper

1. In a large bowl, whisk together jerk seasoning, butter, salt, and pepper. Add the chicken and mix until coated.

2. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.

3. Preheat a grill or grill pan to medium-high heat. Remove the chicken from the marinade and cook for 5-7 minutes per side, or until cooked through.

4. Meanwhile, toast the wraps by grilling them for 30 seconds to 1 minute on each side.

5. Assemble the wraps by placing a piece of cooked chicken in the center, followed by roasted vegetables and a sprinkle of Thai basil.

6. Drizzle with intensely spicy sauce, if using.

8. To make roasted vegetables, toss the vegetables with 1 tbsp of oil, salt, and pepper on a baking sheet. Roast in a preheated oven at 425Β°F (220Β°C) for 20-25 minutes, or until tender.

9. To make jerk seasoning, combine 2 tbsp of allspice, 1 tbsp of thyme, 1 tbsp of cinnamon, and 1 tbsp of nutmeg in a bowl. Mix well.
