Peach Pudding Daifuku
A Japanese-inspired dessert combining sweet peach pudding with rich mochi, a traditional Japanese treat.
Ingredients
- β2 peaches
- β1 cup mochi rice flour
- β1 cup water
- β1/2 cup granulated sugar
- β1 envelope pork or vegetable gelatin
- β2 tablespoons peanut oil
- β1 cup heavy cream
- β2 tablespoons honey
- β1/4 teaspoon vanilla extract
- β2 tablespoons sugar syrup (optional)to taste

In a large saucepan, combine 2 cups of water and 1 cup of granulated sugar. Heat over medium heat, stirring until the sugar dissolves.

Bring the mixture to a boil, then reduce the heat to low and simmer for 5 minutes.

Add the peaches to the saucepan and cook for an additional 5 minutes, or until they're tender.

In a small bowl, mix together the heavy cream, honey, and vanilla extract. Stir to combine.

Add the cream mixture to the saucepan with the peach mixture and stir to combine.

In a separate bowl, mix together the mochi rice flour and 1 cup of water. Knead the dough until it's smooth and pliable.

Divide the dough into small balls, about 1 inch in diameter.

Heat a non-stick skillet or griddle over medium heat. Cook the dough balls for 2-3 minutes on each side, or until they're lightly browned.

To assemble the daifuku, place a cooked mochi ball on a flat surface. Spoon a small amount of the peach pudding mixture onto the center of the mochi.

Fold the mochi in half to enclose the filling, and press the edges together to seal.

Serve the daifuku warm, or at room temperature. If desired, drizzle with sugar syrup.
