Irish Lamb Stew
A traditional Irish lamb stew made with tender lamb, rich lamb broth, and a blend of root vegetables. Suitable for a keto diet.
Ingredients
- β1 pound Lamb shoulderCut into 1-inch cubes
- β2 cups Lamb broth
- β2 tablespoons Irish butter
- β1 medium OnionChopped
- β2 medium CarrotsPeel and chop
- β2 stalks CeleryChop
- β2 cloves GarlicMinced
- β2 tablespoons All-purpose flour
- βto taste Salt and pepper

Heat the lamb broth in a large Dutch oven over medium-high heat.

Add the lamb shoulder to the pot and brown on all sides, about 5 minutes.

Remove the lamb from the pot and set aside.

Add the Irish butter to the pot and melt.

Add the chopped onion, carrots, and celery to the pot and cook until the vegetables are tender, about 10 minutes.

Add the minced garlic to the pot and cook for 1 minute.

Add the flour to the pot and cook for 1 minute.

Add the browned lamb back to the pot and stir to combine.

Season with salt and pepper to taste.
