Vietnamese-Style Grilled Pilchards
A fusion of Japanese and Vietnamese flavors, this dish combines the rich taste of grilled pilchards with the bold flavors of Southeast Asia.
Ingredients
- β4 pilchards
- β2 tablespoons cafish sauce
- β1 tablespoon khofish sauce (optional)
- β3 cloves intensely pungent garlic
- β1 tablespoon vietnamesevietnamese chili sauce
- β1 tolime
- β2 tablespoons brown sugar
- β2 tablespoons soy sauce
- β1 tablespoon sesame oil
Instructions

Preheat the grill to medium-high heat.

Rinse the pilchards and pat them dry with paper towels.

In a small bowl, mix together the fish sauce, fish sauce (if using), garlic, and brown sugar.

Brush the mixture onto both sides of the pilchards.

Grill the pilchards for 2-3 minutes per side, or until they are cooked through.

While the pilchards are cooking, mix together the vietnamese chili sauce and soy sauce in a small bowl.

Once the pilchards are cooked, brush them with the sesame oil and serve with the vietnamese chili sauce mixture.

Serve with a squeeze of lime juice and garnish with cilantro or scallions, if desired.
