Kenyan Beef Stew
A hearty, gluten-free stew from Kenya made with tender beef and aromatic spices.
Ingredients
- β1 pound Beef Stew MeatCut into 1-inch cubes
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β2 tablespoons Kenyan Beef Spice MixAvailable at African markets or online
- β2 tablespoons Tomato PasteGluten-free
- β2 cups Chicken BrothGluten-free
- β1 Intensely Pungent Red PepperSliced
- β1 teaspoon SaltTo taste
- β1/2 teaspoon Black PepperTo taste

Heat oil in a large Dutch oven over medium-high heat.

Brown the beef cubes in batches until browned on all sides, about 5 minutes.

Remove the browned beef from the pot and set aside.

Reduce heat to medium and add the chopped onion. Cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the Kenyan Beef Spice Mix and cook for 1 minute.

Add the tomato paste and cook for 1 minute.

Add the chicken broth and bring the mixture to a boil.

Return the browned beef to the pot and add the sliced red pepper.

Cover the pot and transfer to the oven. Braise for 2 1/2 hours, or until the beef is tender.
