Vietnamese Shrimp Banh Cuon Recipe
A refreshing and flavorful Vietnamese dish made with shrimp, rice noodles, and fresh herbs, wrapped in a delicate rice paper roll.
Ingredients
- β12 large shrimp, peeled and deveined shrimp
- β1 package rice noodlespreferably fresh
- β1 package banh cuon rice paper
- β2 tablespoons intensely flavored fish sauce
- β1/4 cup fresh mint leaves
- β1/4 cup fresh basil leaves
- β1/2 cup bean sprouts
- β1/2 cup chopped cucumber
- β1/2 cup chopped carrot

Soak the rice noodles in hot water for about 10 minutes until soft and pliable.

Prepare the shrimp by marinating them in the intensely flavored fish sauce for at least 30 minutes.

Prepare the fresh herbs by washing and drying them thoroughly.

Assemble the banh cuon by placing a small amount of rice noodles and a shrimp in the center of a banh cuon rice paper.

Add the fresh herbs, bean sprouts, cucumber, and carrot on top of the shrimp.

Fold the bottom half of the rice paper over the filling, then fold in the sides and roll up the banh cuon tightly.

Repeat the process with the remaining ingredients.
