Slovakian-Style Braised Beef Stew
A hearty and flavorful beef stew inspired by Slovakian cuisine, with a Chinese twist.
Ingredients
- β1.5 pounds beef stew meatcut into 2-inch cubes
- β1 medium onionsliced
- β3 cloves garlicminced
- β2 tablespoons slovakian paprikaground
- β2 tablespoons soy sauceuse low-sodium
- β1 tablespoon brown sugar
- β2 cups beef brothhomemade or store-bought
- β2 medium potatoespeeled and cubed
- β2 medium carrotspeeled and sliced

Season the beef with salt and pepper.

Heat oil in a large Dutch oven over medium-high heat. Brown the beef on all sides, then remove from pot.

Add the sliced onion to the pot and cook until browned, about 5 minutes.

Add the minced garlic and cook for 1 minute, until fragrant.

Add the ground paprika and cook for 1 minute, until fragrant.

Add the brown sugar, soy sauce, and beef broth to the pot, stirring to combine.

Return the browned beef to the pot, cover, and transfer to the oven.

Braise the stew for 2.5 hours, or until the beef is tender.

Add the peeled and cubed potatoes and sliced carrots to the pot, cover, and return to the oven.
