Uruguayan Bamboo Shoot Casserole
A hearty, smoky casserole from Uruguay featuring bamboo shoots and a rich, intensely flavored sauce.
Ingredients
- β2 cups Bamboo shootscanned or fresh
- β1 pound Uruguayan chorizooptional, for non-vegetarian version
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β2 teaspoons Smoked paprika
- β1 teaspoon Chili flakes
- β1 teaspoon Cumin
- β2 tablespoons Olive oil
- β2 tablespoons Tomato paste
- β1 cup Red wine

Preheat oven to 375Β°F (190Β°C).

If using chorizo, cook in a pan over medium heat, breaking up with a spoon, until browned.

In a large pot, heat olive oil over medium heat. Add onion and cook until softened.

Add garlic, smoked paprika, chili flakes, and cumin. Cook for 1 minute.

Add bamboo shoots, tomato paste, and red wine. Stir to combine.

If using chorizo, add it to the pot and stir to combine.

Transfer the mixture to a 9x13 inch baking dish.

Cover with aluminum foil and bake for 30 minutes.

Remove foil and continue baking for an additional 15-20 minutes, or until the casserole is hot and bubbly.
