Croatian Paella with Croquetas
A traditional Croatian twist on the classic Spanish paella dish, featuring flaky croquetas as a side. This hearty meal is perfect for a dinner gathering.

- β1 cup Croatian paella riceAvailable at some international grocery stores
- β1 cup MasarepaFor croquetas
- β1 pound, boneless and skinless Chicken breastCut into 1-inch pieces
- β1/2 pound ShrimpShelled and deveined
- β1/2 pound, sliced Intensely flavored chorizoAvailable at some international grocery stores
- β1 package Flaky biscuit doughFor croquetas
- β2 tablespoons Vegetable oilFor frying croquetas
- β2 cups Chicken brothLow-sodium
- β1/4 teaspoon Saifron threadsOptional
- β1/4 teaspoon PaprikaOptional
- βto taste SaltOptional
- βto taste Black pepperOptional

Heat oil in a large skillet over medium heat.

Add chorizo and cook until browned, about 3-4 minutes.

Add chicken breast and cook until browned, about 5 minutes.

Add shrimp and cook until pink, about 2-3 minutes.

Add paella rice, chicken broth, saffron, paprika, salt, and black pepper. Stir to combine.

Bring to a boil, then reduce heat to low and cover.

Simmer for 20-25 minutes or until rice is cooked and liquid has been absorbed.

While rice is cooking, prepare croquetas.

Cut biscuit dough into small pieces and fry in hot oil until golden brown.

Drain on paper towels.

To assemble croquetas, place a small piece of dough in the palm of your hand and fill with a small piece of chorizo.

Form into a ball and seal the edges.

Repeat with remaining dough and chorizo.
