Intensely Braised Russian Beef Stew
A hearty, comforting stew made with tender beef and rich flavors.
Ingredients
- β1 pound beef stew meat
- β1 medium onionchopped
- β2 medium carrotpeeled and chopped
- β2 medium potatopeeled and chopped
- β8 oz mushroomsliced
- β2 tablespoons all-purpose flour
- β2 cups beef broth
- β1 cup red wine
- β2 tablespoons tomato paste
- β1 teaspoon dried thyme
- β1 teaspoon salt
- β1/2 teaspoon black pepper

Heat oil in a large Dutch oven over medium-high heat.

Season the beef with salt and pepper. Add the beef to the pot and cook until browned on all sides, about 5 minutes.

Remove the beef from the pot and set it aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the sliced mushroom and cook until it releases its liquid and starts to brown, about 5 minutes.

Add the flour and cook for 1 minute, stirring constantly.

Add the beef broth, red wine, tomato paste, and thyme. Stir to combine.

Return the beef to the pot and bring the stew to a boil.

Cover the pot and transfer it to the oven.

Braise the stew for 2 1/2 to 3 hours, or until the beef is tender.

Add the chopped carrot and potato to the pot and continue to braise for another 30 minutes.
