Aji de Gallina
A Peruvian classic, Aji de Gallina is a creamy, shredded chicken dish served in a rich aji amarillo sauce and garnished with intense roasted Peruvian black olives.
Ingredients
- β1 lb Shredded Chicken
- β4 Aji Amarillo Peppersdiced
- β3 cloves Garlicminced
- β1/2 cup Roasted Peruvian Black Olivespitted
- β1 cup Heavy Cream
- β1/2 cup Grated Queso Fresco
- β2 tbsp Peruvian Aji Paste

Heat oil in a large skillet over medium heat. Add garlic and cook until fragrant.

Add diced aji amarillo peppers and cook until softened.

Add shredded chicken and cook until heated through.

Stir in heavy cream, queso fresco, and aji paste. Bring to a simmer.

Reduce heat to low and let sauce simmer for 5 minutes.

Stir in roasted Peruvian black olives.
