Midnight Lentil Sopes
A twist on traditional Mexican sopes, these midnight lentil sopes combine the flavors of the night with the simplicity of a hearty lentil dish.
Ingredients
- β1 cup lentils
- β1 medium onion
- β3 cloves garlic
- β1 tsp cumin
- β1 tsp chili powder
- β4-6 sopes
- β1 cup shredded cheeseoptional
- β1 cup sour creamoptional
- β1/4 cup chopped cilantrooptional

Preheat oven to 400Β°F (200Β°C).

In a medium saucepan, combine lentils and 2 cups of water. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender.

In a large skillet, heat 2 tbsp of oil over medium heat. Add onion and cook for 5 minutes, or until softened.

Add garlic, cumin, and chili powder to the skillet. Cook for 1 minute, stirring constantly.

Stir in cooked lentils and season with salt and pepper to taste.

Meanwhile, warm sopes according to package instructions.

To assemble, place a spoonful of lentil mixture onto each sope, followed by a sprinkle of cheese, a dollop of sour cream, and a sprinkle of cilantro. Serve immediately.
