Ethiopian Chickpea Intense Stew

- β1 1/2 cups (drained and rinsed) chickpeas
- β1 large onion
- β2 inches ginger
- β3 cloves garlic
- β2 tbsp berbere spice
- β1 tsp tumeric
- β1 tsp cumin
- β1 tsp paprika
- β1 tsp salt
- β1/2 tsp black pepper
- β2 tbsp olive oil

Instructions

Heat the oil in a large pot over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the ginger and garlic and cook for another minute.

Add the chickpeas, berbere spice, tumeric, cumin, paprika, salt, and black pepper. Stir well.

Add 2 cups of water and bring to a boil.

Reduce the heat to low and simmer, covered, for 20 minutes.
