Bowl of Indulgent Mozzarella Enchiladas
A rich, cheesy twist on traditional enchiladas, served with a side of fresh cilantro and a warm flour tortilla.
Ingredients
- β4 flour tortillasWarm tortillas before filling
- β8 oz indulgent cheeseMozzarella and Monterey Jack blend
- β1 cup eastern style enchilada sauceHomemade or store-bought
- β1 tsp middle eastern spicesCumin and coriander blend
- β1/4 cup cilantroFresh, chopped
- β bowlfor serving
- β1 tsp olive oilfor brushing tortillas

Preheat oven to 375Β°F (190Β°C).

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

In a large skillet, heat the olive oil over medium heat.

Add the middle eastern spices and cook for 1 minute, until fragrant.

Add the enchilada sauce and bring to a simmer. Reduce heat to low.

To assemble the enchiladas, lay a tortilla flat and sprinkle with cheese.

Roll the tortilla up and place seam-side down in the skillet.

Repeat with the remaining tortillas and cheese.

Cover the skillet with a lid and cook for 5-7 minutes, until the cheese is melted and the tortillas are tender.

Transfer the skillet to the oven and bake for an additional 5-7 minutes, until the cheese is bubbly and golden brown.
