Lamb Koftas with Mediterranean Tzatziki
A flavorful and refreshing Greek-inspired dish that combines the richness of lamb with the coolness of tzatziki sauce.
Ingredients

- β250g Cucumber, peeled and grated
- β1/4 cup Red onion, finely chopped

Preheat grill to medium-high heat.

In a large bowl, combine lamb, olive oil, parsley, garlic, lemon zest, salt, and black pepper. Mix well with your hands until just combined.

Cover the mixture and refrigerate for at least 30 minutes to allow the flavors to meld.

Thread the lamb mixture onto skewers, leaving a small space between each kofta.

Grill the koftas for 8-10 minutes per side, or until cooked to your desired level of doneness.

Meanwhile, combine yogurt, cucumber, and red onion in a bowl. Mix well to combine.

Once the koftas are cooked, let them rest for 5 minutes before serving.

Serve the koftas with tzatziki sauce on the side, garnished with additional parsley if desired.
