Massaman Curry
A rich and flavorful Thai curry made with a blend of spices, coconut milk, and your choice of protein. This Massaman curry recipe is perfect for a weeknight dinner or a special occasion.
Ingredients
- β2 tablespoons Massaman curry paste
- β1 can (14 oz) Coconut milk
- β1 pound Chicken breast or thighs
- β1 medium Onions
- β3 cloves Garlic
- β2 medium Potatoes
- β1/4 cup Peanuts
- β2 tablespoons Fish sauce
- β1 tablespoon Brown sugar
- βto taste Salt
- β2 cups Water

Heat oil in a large pan over medium heat.

Add the Massaman curry paste and cook, stirring constantly, for 1-2 minutes.

Add the coconut milk, fish sauce, and brown sugar. Stir to combine.

Add the chicken and cook until browned, about 5 minutes.

Add the onions, garlic, potatoes, and peanuts. Cook, stirring occasionally, for 10-15 minutes.
