Kueh Lapis (Indulgent Malaysian Layer Cake)
A traditional Malaysian dessert, Kueh Lapis is a rich and moist sponge cake made with layers of butter and sugar, perfect for any occasion.

- β1/2 teaspoon baking powderfresh
- β1 cup unsalted buttersoftened
- β1 cup granulated sugar
- β4 large eggsroom temperature
- β1 cup whole milkscalded
- β1/4 teaspoon salt
- β1/2 cup indulgent chocolate shavingsfor garnish

Preheat the oven to 350Β°F (180Β°C) and grease two 9-inch (23cm) round cake pans.

Sift the flour and baking powder into a medium bowl and set aside.

In a large mixing bowl, beat the butter and sugar until light and fluffy.

Beat in the eggs one at a time, followed by the scalded milk.

Gradually add the sifted flour mixture and mix until just combined.

Divide the batter evenly between the prepared pans and smooth the tops.

Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pans for 5 minutes before transferring to a wire rack to cool completely.

Once the cakes are completely cool, you can assemble the Kueh Lapis by placing one cake layer on top of the other and garnishing with indulgent chocolate shavings.
