Mediterranean Keto Paella
A rich and creamy keto version of the classic Spanish dish, featuring Mediterranean flavors and a variety of textures.
Ingredients
- β1 cup Paella ricepreferably unflavored and unscented
- β1/2 pound Indulgent chorizolook for a keto-friendly variety
- β1/4 cup Mediterranean olivespitted and sliced
- β1/4 cup Fresh parsleychopped
- β1/2 cup Creme fraichefull-fat, unsweetened
- β2 cloves Garlicminced
- βto taste Salt
- βto taste Black pepper

Heat a large skillet over medium-high heat.

Add the chorizo and cook until browned, breaking it up into small pieces as it cooks.

Add the garlic and cook for 1 minute.

Add the paella rice and cook for 2-3 minutes, stirring constantly.

Add the creme fraiche and stir to combine.

Bring the mixture to a simmer and cook for 5-7 minutes, or until the liquid has been absorbed and the rice is tender.
