Mediterranean Pasta Bake
A hearty and flavorful pasta bake inspired by the Mediterranean. This dish is perfect for a weeknight dinner.
Ingredients
- β pasta (1 pound)penne or similar shape
- β homestyle tomato sauce (2 cups)homemade or store-bought
- β feta cheese (1 cup, crumbled)Greek or similar type
- β kalamata olives (1 cup, sliced)pitted and sliced
- β artichoke hearts (1 cup, canned)drained and chopped
- β garlic (3 cloves)minced
- β fresh parsley (1/4 cup, chopped)optional
- β salt and pepperto taste
- β grated mozzarella cheese (1 cup)optional

Preheat the oven to 375Β°F (190Β°C).

Cook the pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the tomato sauce over medium heat.

Add the garlic and cook for 1 minute until fragrant.

Stir in the artichoke hearts, olives, and feta cheese. Cook for 2-3 minutes until heated through.

Combine the cooked pasta, sauce mixture, and chopped parsley (if using) in a large bowl.

Transfer the pasta mixture to a 9x13-inch baking dish.

If using mozzarella cheese, sprinkle on top of the pasta mixture.

Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
