French Victoria Sponge Cake
A classic French dessert, this Victoria sponge cake is a simple yet elegant treat, perfect for a weeknight dessert or special occasion.

- β1 cup gr granulated sugar
- β4 large eggsat room temperature
- β1/2 cup unsalted butter, softened
- β2 tsp pure vanilla extract
- β1 cup raspberries
- β1 cup confectioners' sugar

Preheat the oven to 350Β°F (175Β°C). Line two 8-inch round cake pans with parchment paper.

In a medium bowl, whisk together the flour and sugar. Set aside.

In a large bowl, whisk together the eggs and butter until light and fluffy.

Add the vanilla extract and whisk to combine.

Gradually add the flour mixture to the wet ingredients and whisk until just combined.

Divide the batter evenly between the prepared pans and smooth the tops.

Bake for 20-25 minutes, or until a toothpick inserted into the center of each cake comes out clean.

Allow the cakes to cool in the pans for 5 minutes, then transfer them to a wire rack to cool completely.

Once the cakes are cool, spread a layer of raspberry jam on top of one of the cakes.

Dust the top of the second cake with confectioners' sugar and place it on top of the first cake.
