Southern Cornmeal Fritters
Classic American cornbread fritters made with a crispy outside and a tender inside.
Ingredients
- β1 cup Cornmeal
- β1/2 cup All-purpose flour
- β1 tablespoon Granulated sugar
- β1 Large egg
- β3/4 cup Buttermilk
- β2 tablespoons Melted unsalted butter
- β1/2 teaspoon Salt
- β1 1/2 teaspoons Baking powder

In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.

In a separate bowl, whisk together buttermilk, egg, and melted butter.

Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.

Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.

Using a 1/4 cup measuring cup, scoop the batter into the hot oil.

Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy.

Remove the fritters from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
