Welsh Beef Roast with Herby Horseradish Sauce
A classic Welsh-inspired beef roast served with a tangy herby horseradish sauce. Perfect for special occasions or a hearty Sunday dinner.
Ingredients
- β1.5 kg beef roastchuck or round work well
- β2 tablespoons horseradishfresh or jarred
- β2 tablespoons herbsfresh thyme and rosemary work well
- β2 cups beef brothhomemade or store-bought
- β2 tablespoons all-purpose flourfor dusting
- β4 tablespoons butterfor basting
- β saltto taste
- β black pepperto taste

Preheat oven to 220Β°C (425Β°F).

Season the beef roast with salt and black pepper.

Heat 2 tablespoons of oil in a large oven-safe pan over high heat.

Sear the beef roast for 2-3 minutes on each side, then transfer to the oven.

Roast for 20 minutes per kilogram, or until the beef reaches your desired level of doneness.

While the beef is roasting, mix the horseradish and herbs in a small bowl.

After the beef has been roasting for 30 minutes, baste it with butter and add the horseradish mixture to the pan.

Continue roasting for another 20-30 minutes, or until the beef is cooked through and the sauce is bubbly.
