Szechuan Chicken Stir Fry
A classic Chinese dish with a spicy kick. This quick and easy stir fry is a great option for a weeknight dinner.
Ingredients
- ●1 pound chicken breastcut into bite-sized pieces
- ●2 tablespoons vegetable oil
- ●2 inches gingersliced
- ●3 cloves garlicminced
- ●1 teaspoon szechuan pepper
- ●2 tablespoons soy sauce
- ●2 tablespoons chicken broth
- ●1/4 cup green onionschopped
- ●1/4 cup szechuan peppercornstoasted and ground
Instructions

Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat.

Add the chicken to the wok and cook until browned and cooked through, about 5-7 minutes. Remove from the wok and set aside.

In the same wok, add the remaining 1 tablespoon of vegetable oil. Add the sliced ginger and minced garlic and cook until fragrant, about 30 seconds.

Add the Szechuan pepper, soy sauce, and chicken broth to the wok. Stir to combine and bring to a simmer.

Return the chicken to the wok and stir to coat with the sauce.

Add the chopped green onions and toasted Szechuan peppercorns to the wok and stir to combine.

Serve the Szechuan chicken hot, garnished with additional green onions and Szechuan peppercorns if desired.

Note: For an extra spicy kick, add some red pepper flakes to the sauce.

Cook time can be reduced by cooking the chicken in a preheated oven at 400°F (200°C) for 15-20 minutes, or until cooked through.
