Carne Guisada con Aromáticas
A hearty Mexican beef stew infused with the warmth of saudi spices and the earthiness of herbal notes.
Ingredients

- ●1 teaspoon ground cumin arabian
- ●1 teaspoon ground coriander saudi
- ●2 sprigs fresh oregano, chopped herbal
- ●1 can (14.5 oz) diced tomatoes velvety
- ●2 cups beef broth beef broth
- ●1 large onion, chopped onionabout 2 cups
- ●3 cloves garlic, minced garlic
- ●2 chipotle peppers in adobo sauce, chopped chipotle peppers
- ●1 teaspoon salt salt

Heat oil in a large Dutch oven over medium-high heat. Brown the beef in batches until browned on all sides, about 5 minutes. Remove the browned beef from the pot and set aside.

Reduce the heat to medium and add the onion to the pot. Cook until the onion is translucent, about 5 minutes.

Add the garlic, cumin, coriander, and chipotle peppers to the pot. Cook for 1 minute.

Stir in the diced tomatoes, beef broth, oregano, salt, and pepper. Bring the mixture to a boil.

Return the browned beef to the pot and bring to a boil.

Reduce the heat to low and simmer, covered, until the beef is tender, about 2 hours.

Serve the stew hot, garnished with fresh cilantro or scallions if desired.
