Thai Berry Irish Stew
A twist on the classic Irish stew with a Thai twist, featuring juicy berries and herbal notes.
Ingredients
- β1.5 lbs Irish LambCut into 1-inch cubes
- β2 tbsp Thai BasilChopped
- β1 cup Juicy BerriesFresh or frozen
- β2 stalks Tart LemongrassSliced
- β2 tsp Herbal Curry PowderStore-bought or homemade
- β3 medium PotatoesPeel and chop
- β1 medium OnionChopped
- β2-inch piece GingerSliced
- β2 tbsp Fish SauceOptional
- β1 tsp Soy SauceOptional

Heat oil in a large Dutch oven over medium-high heat.

Add lamb and cook until browned, about 5 minutes. Remove from pot and set aside.

Add more oil if necessary, then add onion, ginger, and lemongrass. Cook until softened, about 5 minutes.

Add potatoes, curry powder, fish sauce, and soy sauce (if using). Cook for 1 minute.

Add lamb back into the pot, along with the berries and Thai basil. Stir to combine.

Bring to a boil, then reduce heat to low and simmer, covered, for 30 minutes.

Season with salt and pepper to taste. Serve hot, garnished with additional Thai basil if desired.
