Turkish-Style Vegetable Bake
A flavorful and healthy vegetable bake infused with the aroma of Turkish spices. Perfect for a weeknight dinner!
Ingredients

- β1 teaspoon Turkish spice blend
- β1 clove Garlicminced
- β1 cup Crispy breadcrumbs
- β1 cup Mixed vegetablessuch as zucchini, bell peppers, and onions
- β1/2 teaspoon Herbal salt
- β1 medium Baked eggplantdiced

Preheat oven to 375Β°F (190Β°C).

In a large bowl, toss the mixed vegetables with 1 tablespoon of vegetable oil, Turkish spice blend, and garlic until coated.

Transfer the vegetables to a baking dish and top with crispy breadcrumbs.

In a separate bowl, mix together herbal salt and 1 tablespoon of vegetable oil.

Brush the mixture evenly over the vegetables.

Bake for 20-25 minutes or until the vegetables are tender and the breadcrumbs are golden brown.

Meanwhile, bake the eggplant in the oven for 10-12 minutes or until tender.
