Pork Loin Roast with Herb Crust
A classic portuguese-inspired pork roast dish with a fragrant herb crust. Perfect for a special occasion or a weekend dinner.
Ingredients
- ● pork loin roast (1.5 kg)
- ● olive oil (2 tbsp)for rubbing
- ●minced garlic (3 cloves)for rub
- ● onion powder (1 tsp)for rub
- ● chopped fresh rosemary (2 tbsp)for rub
- ● chopped fresh thyme (2 tbsp)for rub
- ● salt (1 tsp)
- ● black pepper (1 tsp)
- ● lemon wedges (4)for serving

Preheat the oven to 180°C (350°F).

Rinse the pork loin roast and pat it dry with paper towels.

In a small bowl, mix together the olive oil, garlic, onion powder, rosemary, thyme, salt, and black pepper.

Rub the herb mixture all over the pork loin roast, making sure to coat it evenly.

Place the pork loin roast in a roasting pan and put it in the oven.

Roast the pork for 20 minutes per kilogram, or until it reaches an internal temperature of 63°C (145°F).

Remove the pork from the oven and let it rest for 10 minutes before slicing and serving.

Serve with lemon wedges on the side.
