Crunchy Herb and Rice Pilaf
A flavorful and crunchy side dish made with fragrant herbs, crisp vegetables, and a hint of polish flair.
Ingredients
- β2 cups, chopped Herbaceous Fresh ParsleyFresh from the garden
- β1 cup, peeled and grated Crisp CarrotsAdd crunch to your pilaf
- β1/2 cup Polish Sausage, cooked and dicedAdd a smoky flavor
- β2 cups White RiceUncooked
- β4 cups Vegetable BrothLow-sodium

Heat oil in a large skillet over medium-high heat.

Add the grated carrots and cook until they start to soften, about 3-4 minutes.

Add the cooked Polish sausage and cook for an additional 2 minutes.

Add the chopped parsley and cook for 1 minute.

Add the uncooked rice and stir to coat with oil and mix with vegetables.

Add the vegetable broth and bring to a boil.
