Venezuelan Oxtail Stew
A hearty and flavorful stew originating from Venezuela, made with tender oxtail and bold spices.
Ingredients
- β2 pounds oxtail
- β2 tablespoons vegetable oil
- β1 medium onion
- β3 cloves garlic
- β2 chili peppers
- β1 tablespoon chili powder
- β1 teaspoon cumin
- β2 tablespoons tomato paste
- β2 cups beef broth
- β1 cup red wine

Heat oil in a large Dutch oven over medium-high heat.

Brown oxtail on all sides, remove from pot and set aside.

Reduce heat to medium and sautΓ© onion until softened.

Add garlic and chili peppers and cook for 1 minute.

Add chili powder and cumin and cook for 1 minute.

Add tomato paste and cook for 1 minute.

Add beef broth and red wine to the pot.

Return oxtail to the pot and bring to a boil.

Cover and transfer to the oven.

Braise for 2 1/2 hours, or until oxtail is tender.
