- β1 cup dried or 2 cups cooked ChickpeasCanned chickpeas can also be used
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β1 medium Red bell pepperDiced
- β2 medium CarrotsPeeled and sliced
- β2 medium PotatoesPeeled and cubed
- β2 tablespoons Tomato pasteOptional
- β1 teaspoon Dried oreganoOr 1 tablespoon chopped fresh oregano
- β1 teaspoon SaltTo taste
- β1/2 teaspoon Black pepperTo taste

Heat oil in a large pot over medium heat.

Add onion, garlic, and bell pepper, and cook until the vegetables are tender.
