Szechuan Knafeh Pilaf
A spicy twist on traditional Chinese pilaf, incorporating the popular Middle Eastern dessert knafeh.

Ingredients
- β250g Knafeh cheeseshop-bought or homemade
- β150g Jasmine rice
- β2 tablespoons Vegetable oil
- β1 medium Onion
- β3 cloves Garlic
- β1 teaspoon Szechuan peppercorns
- β2 teaspoons Sichuan hot pot oilsubstitute with chili oil if needed
- β2 tablespoons Soy sauce
- β1 teaspoon Pilaf spice blendcustom or shop-bought

Instructions

Heat oil in a wok or large pan over medium-high heat.

Add onion and garlic, stir-frying until translucent.

Add Szechuan peppercorns and Sichuan hot pot oil, stir-frying for 1 minute.

Add knafeh cheese, breaking it up with a spoon as it melts.

Add jasmine rice, stir-frying for 2 minutes.

Add soy sauce, pilaf spice blend, and stir-fry for 1 minute.
