Jamaican Chicken Fried Rice
Spicy and hearty, this dish combines the flavors of Jamaica and Thailand.
Ingredients
- β1 pound, cut into bite-sized pieces chicken breast
- β2 tablespoons Jamaican jerk seasoning
- β2 tablespoons coconut oil
- β2 cups, cooked rice
- β1 bunch, chopped scallions
- β1, sliced jalapeno peppers
- β1 tablespoon fish sauce
- β1 tablespoon soy sauce
- βto taste salt
- βto taste black pepper
Instructions

Heat 1 tablespoon of coconut oil in a large skillet over medium-high heat.

Add the chicken and cook until browned, about 5-7 minutes.

Add the Jamaican jerk seasoning to the chicken and stir to combine.

Add the cooked rice to the skillet and stir to combine with the chicken and seasoning.

Add the scallions, jalapeno peppers, fish sauce, and soy sauce to the skillet and stir to combine.
