Brazilian Chicken Pasta
A spicy and hearty pasta dish inspired by Brazilian cuisine, featuring chicken and pasta in a flavorful sauce.
Ingredients
- β500g chicken breastboneless and skinless
- β250g pastapenne or fusilli work well
- β200ml coconut milkfull-fat for added flavor
- β1 tsp spicy Italian seasoningor to taste
- β1 medium oniondiced
- β3 cloves garlicminced
- β1/2 tsp red pepper flakesor to taste
- β1 tsp saltor to taste
- β1/2 tsp black pepperor to taste
- β50g grated Parmesanoptional

Cook the pasta in boiling salted water until al dente.

In a large skillet, heat some oil over medium-high heat.

Add the chicken and cook until browned on both sides and cooked through.

Remove the chicken from the skillet and set aside.

Add more oil to the skillet if needed, then add the onion and garlic and cook until softened.

Add the spicy Italian seasoning, red pepper flakes, salt, and black pepper, and cook for 1 minute.

Pour in the coconut milk and bring to a simmer.

Return the chicken to the skillet and simmer in the sauce for a few minutes.

Stir in the grated Parmesan (if using) and cook until melted.
