Coq au Vin
A classic French dish made with chicken cooked in red wine, mushrooms, onions, and bacon.
Ingredients
- β1 1/2 pounds Chicken thighs
- β6 slices Bacon
- β2 medium Onions
- β1 cup Mushrooms
- β1 cup Red wine
- β1 cup Chicken broth
- β2 tablespoons Tomato paste
- β2 sprigs Thyme
- βto taste Salt
- βto taste Black pepper
Instructions

Season the chicken with salt and pepper.

Cook the bacon in a large Dutch oven over medium heat until crispy.

Remove the bacon from the pot and set aside.

Add the onions to the pot and cook until they are softened and lightly browned.

Add the mushrooms to the pot and cook until they are softened.

Add the chicken to the pot and cook until it is browned on all sides.

Add the red wine, chicken broth, tomato paste, and thyme to the pot.

Return the bacon to the pot and bring the mixture to a boil.

Reduce the heat to low and simmer, covered, for 25-30 minutes, or until the chicken is cooked through.
