Greek Guanciale Lasagna
A rich and savory Italian-inspired dish with the addition of Greek flavors.
Ingredients
- ●8-10 sheets Lasagna
- ●6 slices Guancialecut into small pieces
- ●1 cup Greek yogurtfor bechamel sauce
- ●1 cup, grated Parmesan cheese
- ●1 cup, crumbled Feta cheese
- ●1 medium, chopped Onion
- ●3 cloves, minced Garlic
- ●2 tbsp Tomato paste
- ●1/4 cup, chopped Fresh parsley

Preheat oven to 375°F (190°C).

Cook lasagna sheets according to package instructions.

In a pan, cook guanciale until crispy, then set aside.

In another pan, sauté onion and garlic until softened.

Add tomato paste and cook for 1 minute.

Add cooked lasagna sheets to the pan, stir to coat with sauce.

In a separate saucepan, make bechamel sauce with Greek yogurt and Parmesan cheese.

Assemble lasagna by layering cooked lasagna sheets, guanciale, bechamel sauce, and feta cheese.

Repeat for 2-3 layers, finishing with a layer of bechamel sauce and Parmesan cheese.

Bake in the oven for 30-40 minutes, or until golden brown.
