Sardinian Calamarata with Heart-Healthy Twist
A traditional Sardinian pasta dish, now with the addition of healthier ingredients to boost flavor and nutrition.
Ingredients
- ●12 oz (340g) Calamarata Pasta
- ●2 cups (475ml) Hearty Tomato SauceUse a mixture of crushed and diced tomatoes for a rich flavor
- ●1/2 cup (115g) Sardinian-Style OlivesPitted and sliced for a better texture
- ●1/4 cup (15g) Fresh Basil LeavesChopped for garnish
- ●3-4 Garlic ClovesMinced for sautéing
- ●2 tbsp (30ml) Olive OilFor sautéing and finishing
- ●to taste SaltUse a flaky sea salt for added texture
- ●to taste Black PepperFreshly ground for added flavor
Instructions

Bring a large pot of salted water to a boil for the pasta.

Cook the Calamarata according to the package instructions until al dente.

In a large skillet, heat the olive oil over medium heat.

Add the minced garlic and sauté until fragrant, about 1 minute.

Add the Sardinian-Style Olives and sauté for another minute.

Add the Hearty Tomato Sauce and stir to combine.

Simmer the sauce over low heat for 5-7 minutes, stirring occasionally.

Season the sauce with salt and black pepper to taste.

Reserve 1 cup of pasta water before draining the Calamarata.

Add the cooked pasta to the skillet with the sauce and toss to combine.

If the sauce seems too thick, add some of the reserved pasta water.

Serve the pasta hot, garnished with chopped fresh basil leaves.
